Lemon chicken, bacon, tomato & spiced crisped rice salad!
Deconstructed lemon chicken, bacon, tomato and spiced crisped rice salad. A gluten free, dairy free, soy free deconstructed salad with a bit of a spicy kick!
- Defrost a GSN chicken breast overnight. Place it in a frying pan on a very low heat and add 2 tbsp of lemon juice. Place 2 slices of fresh lemon on the top and leave for 10 to 15 minutes. Turn over and cook for an equal amount on the other side. Once cooked slice into pieces.
- Meanwhile weigh out your rice. I buy it ready spiced and crisped from Tesco. Cook the bacon in a pan until crispy and slice the cherry tomatoes.
- When everything is ready arrange on a plate or throw together in your Tuppaware box for a delicious work lunch.
